The best thing about Passover is Bobby Kirshbaum’s chocolate covered matzo. My Mom is no longer with us, but the treat lives on. It’s easy to make and sooooooo delicious.
Matzo (about 3 full size pieces and 4 smaller pieces)
2 cups semi –sweet chocolate chips
1 cup chopped nuts (I like pecans, but you can use your favorite)
1 stick butter
1 cup light brown sugar
Preheat oven to 350 degrees
On a large cookie sheet spread out the matzo so it covers the entire sheet without overlapping. I’ve found the best way to get the right size pieces is to gently cut them with a scissors.
Cover the matzo with 2 cups chocolate chips and one cup nuts. Spread them out so that they cover evenly.
In a small sauce pan melt the butter and brown sugar. Bring to a boil, and boil for 5 minutes stirring constantly.
Pour the brown sugar/butter sauce evenly over the sheet of matzo.
Bake in the oven for 8-10 minutes until the chocolate chips are melted.
Cool until it’s completely hard and solid.
Cut into bite size pieces (you’ll have a lot of breakage, don’t worry, they still taste good).
